Seamus Mullen is an award-winning New York chef, restaurateur, and cookbook author known for his inventive yet approachable Spanish cuisine. He is also a leading authority on health and wellness. Seamus Mullen discusses his journey of eating well and personal fitness, “I grew up on a farm in Vermont, so I’ve been around healthy food all my life, but as I started to focus more on my career as a chef in my early twenties, I started to not feel so great, gained some weight, and eventually got very sick. I was diagnosed with rheumatoid arthritis. And I kind of thought that that was going to be my lot in life- that I was going to be sick all the time. But I was fortunate enough to meet a great doctor who helped me reevaluate how I was living my life and also change the way that I was eating. Overtime I started to see some serious changes in the way I felt. Eventually I got to the point where I was no longer suffering from the disease and I felt healthy and I was able to get back to being physically active. Food has obviously been a really integral part of that journey for me.”
