Seamus Mullen is an award-winning New York chef, restaurateur, and cookbook author known for his inventive yet approachable Spanish cuisine. He is also a leading authority on health and wellness. In his twenties he was an avid cyclist who raced competitively. In 2007, he was diagnosed with rheumatoid arthritis, an autoimmune disease that forced him to rethink his relationship with food. This led to his first cookbook Hero Food, published in 2012. Through food, exercise, and lifestyle changes, Seamus was able to successfully create a healthy lifestyle. As a testament to his newly reclaimed health, in November 2014 he raced in La Ruta de Los Conquistadores, which is one of the most challenging mountain bike races in the world. He is currently making a documentary about his journey called “Back on the Bike.”

Seamus Mullen discusses his journey of eating well and personal fitness, “I grew up on a farm in Vermont, so I’ve been around healthy food all my life, but as I started to focus more on my career as a chef in my early twenties, I started to not feel so great, gained some weight, and eventually got very sick. I was diagnosed with rheumatoid arthritis. And I kind of thought that that was going to be my lot in life- that I was going to be sick all the time. But I was fortunate enough to meet a great doctor who helped me reevaluate how I was living my life and also change the way that I was eating. Overtime I started to see some serious changes in the way I felt. Eventually I got to the point where I was no longer suffering from the disease and I felt healthy and I was able to get back to being physically active. Food has obviously been a really integral part of that journey for me.”
